Chinese Vegetables Recipes - Peas with Mushrooms Recipe

Ingredients

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 1 spring onion (scallion), chopped

  • 225 g/8 oz mushrooms, halved

  • 225 g/8 oz frozen peas

  • 30 ml/2 tbsp soy sauce

  • 5 ml/1 tsp sugar

  • 120 ml/4 fl oz/1/2 cup chicken stock

  • 5 ml/1 tsp corn flour (cornstarch)


Method:

  1. Heat the oil and fry the spring onion until lightly browned.

  2. Add the mushrooms and stir-fry for 3 minutes. Add the peas and stir-fry for 4 minutes.

  3. Add the remaining ingredients and stir-fry for 2 minutes.
