Chinese Vegetables Recipes - Potatoes Saute Recipe
Ingredients

350 g/12 oz potatoes, peeled and cut into matchsticks
-
30 ml/2 tbsp groundnut (peanut) oil
-
1 clove garlic, crushed
-
3 spring onions (scallions), chopped
-
15 ml/1 tbsp soy sauce
-
5 ml/1 tsp wine vinegar
-
salt and freshly ground pepper
Method:

Blanch the potatoes in boiling water for 20 seconds
then drain.

Heat the oil and fry the garlic and
spring onions until lightly browned. Add the
potatoes and stir-fry for 2 minutes.

Add the soy
sauce and wine vinegar and season to taste with salt
and pepper.

Fry for a few minutes until the
potatoes are cooked and lightly browned.
