Chinese Vegetables Recipes - Potatoes Saute Recipe

Ingredients

  • 350 g/12 oz potatoes, peeled and cut into matchsticks

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 1 clove garlic, crushed

  • 3 spring onions (scallions), chopped

  • 15 ml/1 tbsp soy sauce

  • 5 ml/1 tsp wine vinegar

  • salt and freshly ground pepper


Method:

  1. Blanch the potatoes in boiling water for 20 seconds then drain.

  2. Heat the oil and fry the garlic and spring onions until lightly browned. Add the potatoes and stir-fry for 2 minutes.

  3. Add the soy sauce and wine vinegar and season to taste with salt and pepper.

  4. Fry for a few minutes until the potatoes are cooked and lightly browned.
