Chinese Vegetables Recipes - Pumpkin with Rice Noodles Recipe
Ingredients
350 g/12 oz rice noodles
15 ml/1 tbsp groundnut (peanut) oil
2 spring onions (scallions), sliced
225 g/8 oz pumpkin, cubed
250 ml/1 cup chicken stock
2.5 ml/1/2 tsp sugar
salt and freshly ground pepper
100 g/4 oz peeled prawns
Method:
Blanch the noodles in boiling water for 2 minutes
then drain.
Heat the oil and stir-fry the spring
onions for 30 seconds. Add the pumpkin and stir-fry
for 1 minute.
Add the stock and noodles, bring to
the boil and simmer, uncovered, for about 5 minutes
until the pumpkin is almost cooked. Add the sugar
and season with salt and pepper.
Simmer for about 10
minutes until the noodles are just tender and the
liquid has reduced slightly. Add the prawns and heat
through before serving.
