Chinese Vegetables Recipes - Shallots in Malt Beer Recipe

Ingredients

  • 15 ml/1 tbsp walnut oil

  • 450 g/1lb shallots

  • 10 ml/2 tsp brown sugar

  • 5 ml/1 tsp red peppercorns

  • 250 ml/1 cup malt beer

  • 45 ml/3 tbsp balsamic vinegar

  • salt and freshly ground pepper

  • 2.5 ml/1/2 tsp paprika

  • 1 lamb's lettuce


Method:

  1. Heat the oil and fry the shallots until golden brown. Add the sugar and stir-fry until translucent.

  2. Add the peppercorns, beer and balsamic vinegar and simmer for 1 minute. Season with salt, pepper and paprika.

  3. Arrange the lettuce leaves around the edge of a warmed serving plate and spoon the shallots into the centre.
