Chinese Vegetables Recipes - Spiced Potatoes Recipe

Ingredients

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 350 g/12 oz potatoes. peeled and diced

  • 1 clove garlic, crushed

  • 2.5 ml/1/2 tsp salt

  • 2 spring onions (scallions), chopped

  • 2 dried chili peppers, seeded and chopped


Method:

  1. Heat the oil and fry the potatoes until lightly golden. Remove them from the pan.

  2. Reheat the oil and fry the garlic, salt, spring onions and chili peppers until lightly browned.

  3. Return the potatoes to the pan and stir-fry until the potatoes are cooked.
