Chinese Vegetables Recipes - Spiced Potatoes Recipe
Ingredients

30 ml/2 tbsp groundnut (peanut) oil

350 g/12 oz potatoes. peeled and diced
-
1 clove garlic, crushed
-
2.5 ml/1/2 tsp salt

2 spring onions (scallions), chopped
-
2 dried chili peppers, seeded and chopped
Method:
-
Heat the oil and fry the potatoes until lightly
golden. Remove them from the pan.
-
Reheat the oil and fry the garlic, salt, spring
onions and chili peppers until lightly browned.
-
Return the potatoes to the pan and stir-fry until
the potatoes are cooked.
