Ingredients

15 ml/1 tbsp groundnut (peanut) oil

1 clove garlic, finely chopped
-
1 slice ginger root, minced
-
2 spring onions (scallions), chopped
-
225 g/8 oz button mushrooms
-
15 ml/1 tbsp hoi sin sauce
-
15 ml/1 tbsp rice wine or dry sherry
-
45 ml/3 tbsp chicken stock
-
5 ml/1 tsp sesame oil
Method:
-
Heat the oil and stir-fry the garlic, ginger and
spring onions for 2 minutes.

Add the mushrooms and
stir-fry for 2 minutes. Add the remaining
ingredients and stir-fry for 5 minutes.
