Chinese Vegetables Recipes - Spinach with Peanuts Recipe

Ingredients

  • 30 ml/2 tbsp peanuts

  • 450 g/1  b spinach, shredded

  • 2.5 ml/1/2 tsp salt

  • 100 g/4 oz smoked ham, chopped

  • 15 ml/1 tbsp groundnut (peanut) oil


Method:

  1. Toast the peanuts in a dry pan then chop coarsely. Blanch the spinach in boiling water for 2 minutes then drain well and chop.

  2. Mix in the peanuts, salt, ham and oil and serve at once.
