Chinese Recipes - Steamed Aubergine Recipe
Ingredients
1 aubergine (eggplant)
300ml/2 tbsp soy sauce
5ml/1 tsp peanut oil
Method:
Score the aubergine skin a few times and place it in an ovenproof dish.
Place on a rack in a steamer and steam over gently simmering water for about 25 minutes until soft.
Leave to cool slightly then peel off the skin and tear the flesh into shreds.
Sprinkle with soy sauce and oil and stir well. Serve hot or cold.
