Chinese Vegetables Recipes - Steamed Mushrooms Recipe

Ingredients

  • 18 dried Chinese mushrooms

  • 450 ml/2 cups stock

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 5 ml/1 tsp sugar


Method:

  1. Soak the mushrooms in warm water for 30 minutes then drain, reserving 250 ml/1 cup of soaking liquid.

  2. Discard the stalks and arrange the caps in a heatproof bowl.

  3. Add the remaining ingredients, stand the bowl on a rack in a steamer, cover and steam over boiling water for about 1 hour.
