Chinese Vegetables Recipes - Steamed Stuffed Mushrooms Recipe

Ingredients

  • 450 g/1 lb large mushrooms

  • 225 g/8 oz minced (ground) pork

  • 225 g/8 oz peeled prawns, finely chopped

  • 4 water chestnuts, finely chopped

  • 15 ml/1 tbsp corn flour (cornstarch)

  • 5 ml/1 tsp salt

  • 5 ml/1 tsp sugar

  • 30 ml/2 tbsp soy sauce

  • 120 ml/4 fl oz/1/2 cup


Method:

  1. Remove the stalks from the mushrooms. Chop the stalks and mix them with the remaining ingredients.

  2. Arrange the mushroom caps on an ovenproof plate and top with the stuffing mixture, pressing it down into a dome shape.

  3. Spoon a little stock over each one, reserving a little stock.

  4. Place the plate on a rack in a steamer, cover and steam over gently simmering water for about 45 minutes until the mushrooms are cooked, basting with a little more stock during cooking if necessary.
