Chinese Vegetables Recipes - Stir Fried Aubergine Recipe
Ingredients

4 dried Chinese
mushrooms
-
1 aubergine
(eggplant), peeled and diced
-
30 ml/2 tbsp
corn flour (cornstarch)
-
oil for
deep-frying
-
45 ml/3 tbsp
groundnut (peanut) oil
-
50 g/2 oz
cooked chicken, diced
-
50 g/2 oz
smoked ham, diced
-
50 g/2 oz
bamboo shoots, chopped
-
50 g/2 oz/1/2
cup chopped mixed nuts
-
5 ml/1 tsp salt
-
5 ml/1 tsp
sugar
-
30 ml/2 tbsp
soy sauce
-
30 ml/2 tbsp
rice wine or dry sherry
Method:
-
Soak the mushrooms in warm water for 30 minutes then
drain. Discard the stalks and chop the caps.

toss the
auberinge lightly in corn flour. Heat the oil and
deep-fry the aubergine until golden.

Remove from the
pan and rain well. Heat the oil and stir-fry the
chicken, ham, bamboo shoots and nuts.

Add the remaining
ingredients and stir-fry for a further 3 minutes.

Return the
aubergine to the pan and stir-fry until heated
through.
