Chinese Vegetables Recipes - Stir Fried Aubergine Recipe

Ingredients

  • 4 dried Chinese mushrooms

  • 1 aubergine (eggplant), peeled and diced

  • 30 ml/2 tbsp corn flour (cornstarch)

  • oil for deep-frying

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 50 g/2 oz cooked chicken, diced

  • 50 g/2 oz smoked ham, diced

  • 50 g/2 oz bamboo shoots, chopped

  • 50 g/2 oz/1/2 cup chopped mixed nuts

  • 5 ml/1 tsp salt

  • 5 ml/1 tsp sugar

  • 30 ml/2 tbsp soy sauce

  • 30 ml/2 tbsp rice wine or dry sherry


Method:

  1. Soak the mushrooms in warm water for 30 minutes then drain. Discard the stalks and chop the caps.

  2. toss the auberinge lightly in corn flour. Heat the oil and deep-fry the aubergine until golden.

  3. Remove from the pan and rain well. Heat the oil and stir-fry the chicken, ham, bamboo shoots and nuts.

  4. Add the remaining ingredients and stir-fry for a further 3 minutes.

  5. Return the aubergine to the pan and stir-fry until heated through.
