Sauce Recipe
Ingredients

15 ml/1 tbsp groundnut (peanut) oil

225 g/8 oz straw mushrooms
-
120 ml/4 fl oz/1/2 cup chicken stock

2.5 ml/1/2 tsp sugar
-
5 ml/1 tsp oyster sauce
-
5 ml/1 tsp corn flour (cornstarch)

15 ml/1 tbsp water
Method:
-
Heat the oil and fry the mushrooms gently until well
coated.

Add the stock, sugar and oyster sauce, bring
to the boil then simmer gently until the mushrooms
are tender.
-
Mix the corn flour and water to a paste,
stir into the pan and simmer, stirring, until the
sauce clears and thickens.
