Chinese Vegetables Recipes - Straw Mushrooms in Oyster Sauce Recipe

Ingredients

  • 15 ml/1 tbsp groundnut (peanut) oil

  • 225 g/8 oz straw mushrooms

  • 120 ml/4 fl oz/1/2 cup chicken stock

  • 2.5 ml/1/2 tsp sugar

  • 5 ml/1 tsp oyster sauce

  • 5 ml/1 tsp corn flour (cornstarch)

  • 15 ml/1 tbsp water


Method:

  1. Heat the oil and fry the mushrooms gently until well coated.

  2. Add the stock, sugar and oyster sauce, bring to the boil then simmer gently until the mushrooms are tender.

  3. Mix the corn flour and water to a paste, stir into the pan and simmer, stirring, until the sauce clears and thickens.
