Chinese Vegetables Recipes - Stuffed Aubergine Recipe

Ingredients

  • 4 dried Chinese mushrooms

  • 225 g/8 oz minced (ground) pork

  • 2 spring onions (scallions), minced

  • 1 slice ginger root, minced

  • 30 ml/2 tbsp soy sauce

  • 15 ml/1 tbsp rice wine or dry sherry

  • 5 ml/1 tsp sugar

  • 1 aubergine (eggplant), halved lengthways


Method:

  1. Soak the mushrooms in warm water for 30 minutes then drain. Discard the stalks and chop the caps.

  2. Mix with the pork, spring onions, ginger, soy sauce, wine or sherry and sugar.

  3. Scoop out the seeds of the aubergine to make a hollow shape. Stuff with the pork mixture and arrange in an ovenproof dish.

  4. Place on a rack in a steamer and steam over gently simmering water for 30 minutes until tender.
