Chinese Vegetables Recipes - Stuffed Courgette Bites Recipe
Ingredients

4 large courgettes
(zucchini)
-
225 g/8 oz minced
(ground) pork
-
225 g/8 oz crab meat, flaked
-
2 eggs, beaten
-
30 ml/2 tbsp soy sauce
-
30 ml/2 tbsp oyster
sauce
-
pinch of ground ginger
-
salt and freshly ground
pepper
-
75
ml/5 tbsp corn flour
(cornstarch)
-
50 g/2 oz/1/s cup breadcrumbs

oil for deep-frying
Method:
-
Cut the courgettes in half lengthways and remove the
seeds and cores with a spoon.
-
Mix the pork, crab
meat, eggs, sauces, ginger, salt and pepper.
-
Bind
with the corn flour and breadcrumbs. Cover and chill
for 30 minutes.

Fill the courgettes with the mixture
then cut them into chunks.
-
Heat the oil and deep-fry
the courgettes until golden. Drain on kitchen
paper before serving.
