Chinese Vegetables Recipes - Stuffed Courgette Bites Recipe

Ingredients

  • 4 large courgettes (zucchini)

  • 225 g/8 oz minced (ground) pork

  • 225 g/8 oz crab meat, flaked

  • 2 eggs, beaten

  • 30 ml/2 tbsp soy sauce

  • 30 ml/2 tbsp oyster sauce

  • pinch of ground ginger

  • salt and freshly ground pepper

  • 75 ml/5 tbsp corn flour (cornstarch)

  • 50 g/2 oz/1/s cup breadcrumbs

  • oil for deep-frying


Method:

  1. Cut the courgettes in half lengthways and remove the seeds and cores with a spoon.

  2. Mix the pork, crab meat, eggs, sauces, ginger, salt and pepper.

  3. Bind with the corn flour and breadcrumbs. Cover and chill for 30 minutes.

  4. Fill the courgettes with the mixture then cut them into chunks.

  5. Heat the oil and deep-fry the courgettes until golden. Drain on kitchen paper before serving.
