Chinese Vegetables Recipes - Stuffed Marrow Recipe
Ingredients
450 g/1lb fish
fillets, flaked
5ml/1 tsp salt
2 spring onions
(scallions), chopped
100 g/4 oz smoked
ham, chopped
50 g/2
oz/1/2 cup chopped
almonds
1 marrow, halved
oil for deep-frying
250 ml/1 cup
chicken stock
30 ml/2 tbsp corn flour
(cornstarch)
15 ml/1 tbsp soy
sauce
5 ml/1 tsp sugar
60 ml/4 tbsp water
5 ml/1 tsp sesame oil
15 ml/1 tbsp chopped
flat-leaved parsley
Method:
Mix the fish, salt, spring onions, ham and almonds.
Scoop out the seeds of the marrow and some of the
flesh to make a hollow.
Press the fish mixture into
the marrow. Heat the oil and deep-fry the marrow
halves, one at a time if necessary, until golden
brown.
Transfer to a clean pan and add the stock.
Bring to the boil, cover and simmer for 40 minutes.
Blend the corn flour, soy sauce, sugar, water and
sesame oil to a paste, stir into the pan and simmer,
stirring, until the sauce clears and thickens. Serve
garnished with parsley.
