Chinese Vegetables Recipes - Stuffed Marrow Recipe

Ingredients

  • 450 g/1lb fish fillets, flaked

  • 5ml/1 tsp salt

  • 2 spring onions (scallions), chopped

  • 100 g/4 oz smoked ham, chopped

  • 50 g/2 oz/1/2 cup chopped almonds

  • 1 marrow, halved

  • oil for deep-frying

  • 250 ml/1 cup chicken stock

  • 30 ml/2 tbsp corn flour (cornstarch)

  • 15 ml/1 tbsp soy sauce

  • 5 ml/1 tsp sugar

  • 60 ml/4 tbsp water

  • 5 ml/1 tsp sesame oil

  • 15 ml/1 tbsp chopped flat-leaved parsley


Method:

  1. Mix the fish, salt, spring onions, ham and almonds. Scoop out the seeds of the marrow and some of the flesh to make a hollow.

  2. Press the fish mixture into the marrow. Heat the oil and deep-fry the marrow halves, one at a time if necessary, until golden brown.

  3. Transfer to a clean pan and add the stock. Bring to the boil, cover and simmer for 40 minutes.

  4. Blend the corn flour, soy sauce, sugar, water and sesame oil to a paste, stir into the pan and simmer, stirring, until the sauce clears and thickens. Serve garnished with parsley.
