Chinese Vegetables Recipes - Sweet and Sour Asparagus Recipe

Ingredients

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 450 g/1lb asparagus, cut in diagonal pieces

  • 60 ml/4 tbsp wine vinegar

  • 50 g/1/4 cup brown sugar

  • 15 ml/1 tbsp soy sauce

  • 15 ml/1 tbsp rice wine or dry sherry

  • 5 ml/1 tsp salt

  • 15 ml/1 tbsp corn flour (cornstarch)


Method:

  1. Heat the oil and stir-fry the asparagus for 4 minutes. Add the wine vinegar, sugar, soy sauce, wine or sherry and salt and stir-fry for 2 minutes.

  2. Mix the corn flour with a little water, stir it into the pan and stir-fry for 1 minute.
