Vegetables Recipe
Ingredients

45 ml/3 tbsp
groundnut (peanut) oil

2.5 ml/1/2 tsp
salt
-
2 cloves
garlic, crushed
-
2 carrots,
sliced
-
1 green pepper,
cubed
-
100 g/4 oz
bamboo shoots, cut into strips
-
1 onion, cut
into wedges
-
100 g/4 oz
water chestnuts, cut into strips
-
100 g/4 oz/1/2
cup sugar
-
60 ml/4 tbsp
chicken stock
-
60 ml/4 tbsp
wine vinegar
-
30 ml/2 tbsp
soy sauce
-
15 ml/1 tbsp
corn flour (cornstarch)
Method:
-
Heat the oil, salt and garlic until the garlic turns
light golden.
-
Add the carrots, pepper, bamboo
shoots and onions and stir-fry for 3 minutes. Add
the water chestnuts and stir-fry for 2 minutes.

Mix
together the sugar, stock, wine vinegar, soy sauce
and corn flour then stir it into the pan.
-
Cook,
stirring, until the sauce thickens and clears.
