Chinese Vegetables Recipes - Sweet and Sour Mixed Vegetables Recipe

Ingredients

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 2.5 ml/1/2 tsp salt

  • 2 cloves garlic, crushed

  • 2 carrots, sliced

  • 1 green pepper, cubed

  • 100 g/4 oz bamboo shoots, cut into strips

  • 1 onion, cut into wedges

  • 100 g/4 oz water chestnuts, cut into strips

  • 100 g/4 oz/1/2 cup sugar

  • 60 ml/4 tbsp chicken stock

  • 60 ml/4 tbsp wine vinegar

  • 30 ml/2 tbsp soy sauce

  • 15 ml/1 tbsp corn flour (cornstarch)


Method:

  1. Heat the oil, salt and garlic until the garlic turns light golden.

  2. Add the carrots, pepper, bamboo shoots and onions and stir-fry for 3 minutes. Add the water chestnuts and stir-fry for 2 minutes.

  3. Mix together the sugar, stock, wine vinegar, soy sauce and corn flour then stir it into the pan.

  4. Cook, stirring, until the sauce thickens and clears.
