Chinese Vegetables Recipes - Vegetable Chow Mien Recipe
Ingredients

6 dried Chinese mushrooms
-
450 g/1lb spinach
-
45 ml/3 tbsp groundnut (peanut) oil
-
100 g/4 oz bamboo shoots, sliced
-
2.5 ml/1/2 tsp salt
-
30 ml/2 tbsp soy sauce
-
soft-fried noodles
Method:
-
Soak the mushrooms in warm water for 30 minutes then
drain. Discard the stalks and slice the caps. Halve
the spinach leaves.

Heat the oil and stir-fry the
mushrooms and bamboo shoots for 4 minutes.

Add the
spinach, salt and soy sauce and stir-fry for 1
minute. Add the drained noodles and stir gently
until heated through.
