Chinese Vegetables Recipes - Vegetable Chow Mien Recipe

Ingredients

  • 6 dried Chinese mushrooms

  • 450 g/1lb spinach

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 100 g/4 oz bamboo shoots, sliced

  • 2.5 ml/1/2 tsp salt

  • 30 ml/2 tbsp soy sauce

  • soft-fried noodles


Method:

  1. Soak the mushrooms in warm water for 30 minutes then drain. Discard the stalks and slice the caps. Halve the spinach leaves.

  2. Heat the oil and stir-fry the mushrooms and bamboo shoots for 4 minutes.

  3. Add the spinach, salt and soy sauce and stir-fry for 1 minute. Add the drained noodles and stir gently until heated through.
