Chinese Vegetables Recipes - Vegetable with Honey Recipe

Ingredients

  • 15 ml/1 tbsp groundnut (peanut) oil

  • 1 slice ginger root, chopped

  • 2 cloves garlic, chopped

  • 100 g/4 oz baby sweet corn

  • 2 spring onions (scallions), sliced

  • 1 red pepper, diced

  • 1 green pepper, diced

  • 100 g/4 oz mushrooms, halved

  • 15 ml/1 tbsp honey

  • 15 ml/1 tbsp fruit vinegar

  • 10 ml/2 tsp soy sauce

  • salt and freshly ground pepper


Method:

  1. Heat the oil and fry the ginger and garlic until lightly browned. Add the vegetables and stir-fry for 1 minute.

  2. Add the honey, fruit vinegar and soy sauce and season with salt and pepper. Stir together well and heat through before serving.
