Ingredients

225 g/8 oz
broccoli florets

225 g/8 oz
cauliflower florets

225 g/8 oz
Brussels sprouts

30 ml/2 tbsp
honey
-
30 ml/2 tbsp
soy sauce

30 ml/2 tbsp
wine vinegar
-
5 ml/1 tsp
five-spice powder
-
salt and
freshly ground pepper
-
225 g/8 oz/2
cups plain (all-purpose) flour

250 ml/8 fl
oz/1 cup dry white wine

2 eggs,
separated
-
15 ml/1 tbsp
grated lemon rind

oil for
deep-frying
Method:
-
Blanch the vegetables for 1 minute in boiling water
then drain. Mix together the honey, soy sauce, wine
vinegar, five-spice powder, salt and pepper.

Place
the vegetables in the marinade, cover and chill for
2 hours, stirring occasionally. Mix the flour, wine
and egg yolks until smooth.

Whisk the egg whites
until stiff then fold them into the batter. Season
with salt, pepper and lemon rind.

Drain the
vegetables and coat them in the batter. Heat the
oil and deep-fry until golden brown. Drain on
kitchen paper before serving.
