Ingredients

tbsp groundnut (peanut) oil

garlic, crushed

5 ml/1 tsp
salt

100 g/4 oz
smoked bacon, diced

30 ml/2
tbsp tomato puree (paste)

30 ml/2
tbsp soy sauce
-
30 ml/2
tbsp honey
-
30 ml/2
tbsp hoi sin sauce

300 ml/1
1/4 cups vegetable stock
-
1 red
pepper, cut into strips
-
1 green
pepper, cut into strips
-
1 stick
celery, cut into strips
-
100 g/4 oz
bean sprouts
-
100 g/4 oz
green peas

10 ml/2 tsp
wine vinegar
Method:
-
Heat the oil and fry the garlic and salt until
lightly browned. Add the bacon and fry until crisp.

Blend together the tomato puree, soy sauce, honey,
hoi sin sauce and stock.
-
Add the vegetables to the
pan and stir-fry for 2 minutes until coated in oil.
-
Add the stock mixture, bring to the boil, cover and
simmer for about 20 minutes until cooked.
