Chinese Vegetables Recipes - Vegetables in Tomato Sauce Recipe

Ingredients

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 2 cloves garlic, crushed

  • 5 ml/1 tsp salt

  • 100 g/4 oz smoked bacon, diced

  • 30 ml/2 tbsp tomato puree (paste)

  • 30 ml/2 tbsp soy sauce

  • 30 ml/2 tbsp honey

  • 30 ml/2 tbsp hoi sin sauce

  • 300 ml/1 1/4 cups vegetable stock

  • 1 red pepper, cut into strips

  • 1 green pepper, cut into strips

  • 1 stick celery, cut into strips

  • 100 g/4 oz bean sprouts

  • 100 g/4 oz green peas

  • 10 ml/2 tsp wine vinegar


Method:

  1. Heat the oil and fry the garlic and salt until lightly browned. Add the bacon and fry until crisp.

  2. Blend together the tomato puree, soy sauce, honey, hoi sin sauce and stock.

  3. Add the vegetables to the pan and stir-fry for 2 minutes until coated in oil.

  4. Add the stock mixture, bring to the boil, cover and simmer for about 20 minutes until cooked.
