Dry-cooked Pork Strips Recipe
Ingredients

15ml/1
tbsp groundnut (peanut) oil

30ml/2
tbsp fish sauce

30ml/2
tbsp soy sauce

5ml/1 tsp sugar

225g/8oz pork fillet (tenderloin), cut into thin, bite size strips

8 lettuce leaves
-
shreds
of spring onion (scallion)

chili oil, for
drizzling

fresh coriander (cilantro) leaves

a handful of fresh mint leaves
Serves 2-4
Method:

In a wok or heavy pan, heat the oil, fish sauce and
soy sauce with the sugar.

Add the pork and
stir-fry over a medium heat until all the liquid
has evaporated. Cook the pork until it turns brown,
almost caramelized, but not burnt.

For a light snack.
serve the dry-cooked pork strips with a few salad
leaves and add a few shreds of spring onion
(scallion). 3

For wraps, drop a few strips onto
large lettuce leaves, drizzle a little chili oil
over the top, add a few coriander and mint leaves,
wrap them up and serve immediately. These make good
finger food.
Note:
This very simple dish is quick and light on a hot
day. Pork, chicken, prawns and squid can all be
cooked this way. With the lettuce and herbs, the
pork strips make a very flavor some snack, but you
can also serve them with a dipping sauce.

large-scale reduction of the liquid content
during cooking, rather than an absence of
liquid.
