Chinese Appetizers Recipes - Crab Balls with Water Chestnuts Recipe

Ingredients

  • 450 g/1 lb crab meat, minced

  • 100 g/4 oz water chestnuts, chopped

  • 1 clove garlic, crushed

  • 1 cm/1/2 in slice ginger root, minced

  • 45 ml/3 tbsp corn-flour (cornstarch)

  • 30 ml/2 tbsp soy sauce

  • 15 ml/1 tbsp rice wine or dry sherry

  • 5 ml/1 tsp salt

  • 5 ml/1 tsp sugar

  • 3 eggs, beaten

  • oil for deep-frying


Method:

  1. Mix together all the ingredients except the oil and shape into small balls.

  2. Heat the oil and deep-fry the crab balls until golden brown. Drain well before serving.
