Appetizers Recipes - Steamed Crab Dim Sum Recipe

Ingredients

  • 150g/5oz fresh white crab meat

  • 115g/4oz/1/2 cup lean minced (ground) pork

  • 30ml/2 tbsp chopped Chinese chives

  • 15ml/1 tbsp finely chopped red (bell) pepper

  • 30ml/2 tbsp sweet chili sauce

  • 30ml/2 tbsp hoisin sauce

  • 24 fresh dumpling wrappers (available from Asian stores)

  • Chinese chives, to garnish

  • chili oil and soy sauce, to serve

Serves 4


Method:

  1. Place the crab meat, pork and chopped chives in a bowl. Add the red pepper; sweet chili and hoisin sauces and mix well to combine.

  2. Working with 2-3 wrappers at a time, put a small spoonful of the crab meat and pork mixture into the centre of each wrapper.

  3. Brush the edges of each wrapper with water and fold over to form a half-moon shape. Press and pleat the edges to seal, and tap the base of each dumpling to flatten.

  4. Cover with a clean, damp cloth and make the remaining dumplings in the same way. Arrange the dumplings on one or more lightly oiled plates and fit inside one or more tiers of a bamboo steamer.

  5. Cover the steamer and place over simmering water (making sure the water does not touch the steamer). Steam for 8-10 minutes, or until the dumplings are cooked through and become slightly translucent.

  6. Make a dipping sauce by mixing equal amounts of chili oil and soy sauce in a bowl.

  7. Divide the dumplings among four plates. Garnish with Chinese chives and serve immediately with the sauce.

Note: These delectable Chinese style dumplings have a wonderfully sticky texture and make a perfect appetizer. You can make them in advance, and steam them just before serving.
