Steamed Crab Dim Sum Recipe

fresh white crab meat

115g/4oz/1/2
cup lean minced
(ground) pork

30ml/2
tbsp chopped
Chinese chives

tbsp finely chopped red (bell) pepper

chili sauce

tbsp hoisin sauce

fresh dumpling wrappers (available
from
Asian
stores)

Chinese chives, to garnish

chili
oil and soy sauce, to serve

Method:
-
Place
the crab meat, pork and
chopped chives in a bowl. Add the red pepper;
sweet chili and hoisin sauces and mix well to
combine.

Working with
2-3 wrappers at a time, put a small spoonful of
the crab meat and pork mixture into the centre
of each wrapper.

Brush the
edges of each wrapper with water and fold over
to form a half-moon shape. Press and pleat the
edges to seal, and tap the base of each dumpling
to flatten.

Cover with a clean, damp
cloth and make the remaining dumplings in the
same way. Arrange the dumplings on one or more
lightly oiled plates and fit inside one or more
tiers of a bamboo steamer.

Cover the
steamer and place over simmering water (making
sure the water does not touch the steamer).
Steam for 8-10 minutes, or until the dumplings
are cooked through and become slightly
translucent.

Make a dipping sauce by
mixing equal amounts of chili oil and soy sauce
in a bowl.

Divide the dumplings among
four plates. Garnish with Chinese chives and
serve immediately with the sauce.
Note: These delectable
Chinese style dumplings have a wonderfully sticky
texture and make a perfect appetizer. You can make
them in advance, and steam them just before serving.
