Ingredients

5 eggs

115g/4oz small, fresh prawns (shrimp), shelled and deveined

a
handful
of bean sprouts
-
2 spring onions (scallions), trimmed and finely
sliced

10ml/2 tsp shrimp paste
-
1 bunch coriander (cilantro), chopped

15ml/1 tbsp vegetable oil
-
chili oil,
for drizzling
-
sea salt and ground black pepper
-
fresh coriander
(cilantro) leaves,
to garnish

dipping sauce,
to serve

Method:

Beat the eggs in
a bowl. Stir in the prawns, bean sprouts, spring onions, shrimp paste
and coriander. Season well.

Fill a pan one-third full with water and
bring to the boil. Lightly oil a shallow, heatproof dish and place
on top of the pan.

Pour in the egg mixture and steam for
5-10 minutes, until the eggs
are firm.

Cut the steamed omelet into strips and place these on a
plate. Drizzle a little chili oil over the strips and garnish with
coriander leaves.

Serve the omelet strips with a dipping sauce,
preferably one that is chili based or has a pungent flavor. Shrimp
sauce or chili sauce are good options.
Note:
Throughout China -
and
elsewhere in Asia variations
on this type of steamed omelet are cooked as a snack and may be
eaten at any time of the day. As a finishing touch, cut the omelet
into strips and splash it with chili oil. Alternatively, serve it
with a spicy dipping sauce.
Variation: If you
prefer not to
steam the omelet, fry it in a non-stick pan.
