Chinese Beef Recipes - Beef with Bamboo Shoots and
Mushrooms
Recipe
Ingredients
-
225 g/8 oz lean beef
-
45 ml/3 tbsp groundnut
(peanut) oil
-
1 slice ginger root, minced
-
100 g/4 oz bamboo shoots,
sliced
-
100 g/4 oz mushrooms, sliced
-
45 ml/3 tbsp rice wine or
dry sherry
-
5 ml/1 tsp sugar
-
10 ml/2 tsp soy sauce
-
salt and pepper
-
120 ml/4 fl oz/1/2 cup beef
stock
-
15 ml/1 tbsp corn-flour (cornstarch)
-
30 ml/2 tbsp water
Method:
-
Slice the beef thinly against the grain. Heat the
oil and stir-fry the ginger for a few seconds.

Add
the beef and stir-fry
until just browned. Add the bamboo shoots and
mushrooms and stir-fry for 1 minute.

Add the wine or
sherry, sugar and soy sauce and season with salt and
pepper. Stir in the stock, bring to the boil, cover
and simmer for 3 minutes.

Mix the corn-flour and
water, stir it into the pan and simmer, stirring,
until the sauce thickens.
