Chinese Beef Recipes - Beef with Bamboo Shoots and Mushrooms Recipe

Ingredients

  • 225 g/8 oz lean beef

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 1 slice ginger root, minced

  • 100 g/4 oz bamboo shoots, sliced

  • 100 g/4 oz mushrooms, sliced

  • 45 ml/3 tbsp rice wine or dry sherry

  • 5 ml/1 tsp sugar

  • 10 ml/2 tsp soy sauce

  • salt and pepper

  • 120 ml/4 fl oz/1/2 cup beef stock

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 30 ml/2 tbsp water


Method:

  1. Slice the beef thinly against the grain. Heat the oil and stir-fry the ginger for a few seconds.

  2. Add the beef and stir-fry until just browned. Add the bamboo shoots and mushrooms and stir-fry for 1 minute.

  3. Add the wine or sherry, sugar and soy sauce and season with salt and pepper. Stir in the stock, bring to the boil, cover and simmer for 3 minutes.

  4. Mix the corn-flour and water, stir it into the pan and simmer, stirring, until the sauce thickens.
