Chinese Beef Recipes - Beef with Bean Sprouts Recipe

Ingredients

  • 450 g/1lb lean beef, sliced

  • 1 egg white

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 15 ml/1 tbsp soy sauce

  • 100 g/4 oz bean sprouts

  • 25 g/1 oz pickled cabbage, shredded

  • 1 red chili pepper, shredded

  • 2 spring onions (scallions), shredded

  • 2 slices ginger root, shredded

  • salt

  • 5 ml/1 tsp oyster sauce

  • 5 ml/1 tsp sesame oil


Method:

  1. Mix the beef with the egg white, half the oil, the corn-flour and soy sauce and leave to stand for 30 minutes.

  2. Blanch the bean sprouts in boiling water for about 8 minutes until almost tender then drain.

  3. Heat the remaining oil and stir-fry the beef until lightly browned then remove from the pan.

  4. Add the pickled cabbage, chili pepper, ginger, salt, oyster sauce and sesame oil and stir-fry for 2 minutes.

  5. Add the bean sprouts and stir-fry for 2 minutes. Return the beef to the pan and stir-fry until well mixed and heated through. Serve at once.
