Chinese Beef Recipes - Beef with Cashews Recipe

Ingredients

  • 60 ml/4 tbsp groundnut (peanut) oil

  • 450 g/1lb rump steak, thinly sliced

  • 8 spring onions (scallions), cut into chunks

  • 2 cloves garlic, crushed

  • 1 slice ginger root. chopped

  • 75 g/3 oz/3/4 cup roasted cashews

  • 120 ml/4 fl oz/1/2 cup water

  • 20 ml/4 tsp corn-flour (cornstarch)

  • 20 ml/4 tsp soy sauce

  • 5 ml/1 tsp sesame oil

  • 5 ml/1 tsp oyster sauce

  • 5 ml/1 tsp chili sauce


Method:

  1. Heat half the oil and stir-fry the meat until lightly browned. Remove from the pan.

  2. Heat the remaining oil and stir-fry the spring onions, garlic, ginger and cashews for 1 minute. Return the meat to the pan.

  3. Mix together the remaining ingredients and stir the mixture into the pan. Bring to the boil and simmer, stirring, until the mixture thickens.
