Chinese Beef Recipes - Beef with Cashews Recipe
Ingredients

60 ml/4 tbsp groundnut
(peanut) oil
-
450 g/1lb rump steak, thinly
sliced
-
8 spring onions (scallions), cut into chunks
-
2 cloves garlic, crushed
-
1 slice ginger root.
chopped

75 g/3 oz/3/4 cup roasted
cashews
-
120 ml/4 fl oz/1/2 cup water
-
20 ml/4 tsp corn-flour
(cornstarch)
-
20 ml/4 tsp soy sauce
-
5 ml/1 tsp sesame oil
-
5 ml/1 tsp oyster sauce
-
5 ml/1 tsp chili sauce
Method:

Heat half the oil and stir-fry the meat until
lightly browned. Remove from the pan.

Heat the
remaining oil and stir-fry the spring onions, garlic, ginger and cashews for 1
minute. Return the meat to the pan.

Mix together the
remaining ingredients and stir the mixture into the
pan. Bring to the boil and simmer, stirring, until
the mixture thickens.
