Chinese Beef Recipes - Beef with Cucumber Recipe

Ingredients

  • 450 g/1lb rump steak, thinly sliced

  • 45 ml/3 tbsp soy sauce

  • 30 ml/2 tbsp corn-flour (cornstarch)

  • 60 ml/4 tbsp groundnut (peanut) oil

  • 2 cucumbers, peeled, seeded and sliced

  • 60 ml/4 tbsp chicken stock

  • 30 ml/2 tbsp rice wine or dry sherry

  • salt and freshly ground pepper


Method:

  1. Place the steak in a bowl. Mix together the soy sauce and corn-flour and stir into the steak. Leave to marinate for 30 minutes.

  2. Heat half the oil and stir-fry the cucumbers for 3 minutes until opaque then remove them from the pan. Heat the remaining oil and stir-fry the steak until browned.

  3. Add the cucumbers and stir-fry for 2 minutes. Add the stock, wine or sherry and season with salt and pepper. Bring to the boil, cover and simmer for 3 minutes.
