Chinese Beef Recipes - Beef with Cucumber Recipe
Ingredients

450 g/1lb rump steak,
thinly sliced
-
45 ml/3 tbsp soy sauce
-
30 ml/2 tbsp corn-flour
(cornstarch)

60 ml/4 tbsp groundnut
(peanut) oil
-
2 cucumbers, peeled, seeded
and sliced
-
60 ml/4 tbsp chicken stock
-
30 ml/2 tbsp rice wine or
dry sherry

salt and freshly ground
pepper
Method:

Place the steak in a bowl. Mix together the soy
sauce and corn-flour and stir into the steak. Leave
to marinate for 30 minutes.

Heat half the oil and
stir-fry the cucumbers for 3 minutes until opaque
then remove them from the pan. Heat the remaining
oil and stir-fry the steak until browned.

Add the
cucumbers and stir-fry for 2 minutes. Add the stock,
wine or sherry and season with salt and pepper.
Bring to the boil, cover and simmer for 3 minutes.
