Chinese Beef Recipes - Beef with Green Beans Recipe

Ingredients

  • 225 g/8 oz rump steak, thinly sliced

  • 30 ml/2 tbsp corn-flour (cornstarch)

  • 15 ml/1 tbsp rice wine or dry sherry

  • 15 ml/1 tbsp soy sauce

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 2.5 ml/1/2 tsp salt

  • 2 cloves garlic, crushed

  • 225 g/8 oz green beans

  • 225 g/8 oz bamboo shoots, sliced

  • 50 g/2 oz mushrooms, sliced

  • 50 g/2 oz water chestnuts, sliced

  • 150ml/2/3 cup chicken stock


Method:

  1. Place the steak in a bowl. Mix together 15 ml/1 tbsp of the corn-flour, the wine or sherry and soy sauce, stir into the meat and marinate for 30 minutes.

  2. Heat the oil with the salt and garlic and fry until the garlic is lightly browned. Add the meat and marinade and stir-fry for 4 minutes.

  3. Add the beans and stir-fry for 2 minutes. Add the remaining ingredients, bring to the boil and simmer for 4 minutes.

  4. Mix the remaining corn-flour with a little water and stir it into the sauce. Simmer, stirring, until the sauce clears and thickens.
