Chinese Beef Recipes - Beef with Mange tout Recipe

Ingredients

  • 225 gig oz lean beef

  • 30 ml/2 tbsp corn-flour (cornstarch)

  • 5 ml/1 tsp sugar

  • 5 ml/1 tsp soy sauce

  • 10 ml/2 tsp rice wine or dry sherry

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 2.5 ml/1/2 tsp salt

  • 2 slices ginger root, minced

  • 225 g/8 oz mange tout (snow peas)

  • 60 ml/4 tbsp beef stock

  • 10 ml/2 tsp water

  • freshly ground pepper


Method:

  1. Slice the beef thinly against the grain. Mix half the corn-flour, the sugar, soy sauce and wine or sherry, add to the beef and stir well to coat.

  2. Heat half the oil and stir-fry the salt and ginger and a few seconds. Add mange tout and stir to coat with oil.

  3. Add the stock, bring to the boil and stir well then remove the mange tout and liquid from the pan.

  4. Heat the remaining oil and stir-fry the beef until lightly browned. Return the mange tout to the pan.

  5. Mix the remaining corn-flour with the water, stir into the pan and season with pepper. Simmer, stirring, until the sauce thickens.
