Chinese Beef Recipes - Beef and Spring Onions with Fish Sauce Recipe

Ingredients

  • 350 g/12 oz lean beef, thinly sliced

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 15 ml/1 tbsp water

  • 2.5 ml/1/2 tsp rice wine or dry sherry

  • pinch of bicarbonate of soda (baking soda)

  • pinch of salt

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 6 spring onions (scallions), cut into 5 cm/2 in pieces

  • 2 cloves garlic, crushed

  • 2 slices ginger, minced

  • 5 ml/1 tsp fish sauce

  • 2.5 ml/1/2 tsp oyster sauce


Method:

  1. Marinate the beef with the corn-flour, water, wine or sherry, bicarbonate of soda and salt for 1 hour.

  2. Heat 30 ml/ 2 tbsp of oil and stir-fry the beef with half the spring onions, half the garlic and the ginger until well browned.

  3. Meanwhile, heat the remaining oil and fry the remaining spring onions, garlic and ginger with the fish sauce and oyster sauce until softened. Mix the two together and heat through before serving.
