Chinese Beef Recipes - Chinese Braised Beef Recipe
Ingredients
45 ml/3 tbsp groundnut
(peanut) oil
900 g/2 lb chuck steak
1 spring onion (scallion),
sliced
1 clove garlic, minced
1 slice ginger root,
minced
60 ml/4 tbsp soy sauce
30 ml/2 tbsp rice wine or
dry sherry
5 ml/1 tsp sugar
5 ml/1 tsp salt
pinch of pepper
750 ml/3 cups
boiling water
Method:
Heat the oil and brown the beef quickly on all
sides. Add the spring onion, garlic, ginger, soy
sauce, wine or sherry, sugar, salt and pepper.
Bring to the boil, stirring. Add the boiling water,
bring back to the boil, stirring, then cover and
simmer for about 2 hours until the beef is tender.
