Chinese Beef Recipes - Hot Beef Recipe

Ingredients

  • 450 g/1lb lean beef

  • 6 spring onions (scallions), sliced

  • 4 slices ginger root

  • 15 ml/1 tbsp rice wine or dry sherry

  • 5 ml/1 tbsp soy sauce

  • 4 dried red chili peppers, chopped

  • 10 peppercorns

  • 1 clove star anise

  • 300 ml/1 1/4 cups water

  • 2.5 ml/1/2 tsp chili oil


Method:

  1. Place the beef in a bowl with 2 spring onions, 1 slice of ginger and half the wine and leave to marinate for 30 minutes.

  2. Bring a large pan of water to the boil, add the beef and boil until sealed on all sides then remove and drain.

  3. Place the remaining spring onions, ginger and wine or sherry in a pan with the chili peppers, peppercorns and star anise and add the water.

  4. Bring to the boil, add the beef, cover and simmer for about 40 minutes until the beef is tender. Remove the beef from the liquid and drain well.

  5. Slice it thinly and arrange on a warmed serving plate. Serve sprinkled with chili oil.
