Chinese Beef Recipes - Marinated Beef with Spinach Recipe
Ingredients
450 g/1lb lean beef,
thinly sliced
45 ml/3 tbsp rice wine or
dry sherry
15 ml/1 tbsp soy sauce
5 ml/1 tsp sugar
2.5 ml/1/2 tsp sesame oil
450 g/1lb spinach
45 ml/3 tbsp groundnut
(peanut) oil
2 slices ginger root, minced
30 ml/2 tbsp beef stock
5 ml/1 tsp corn-flour
(cornstarch)
Method:
Flatten the meat slightly by pressing with the
fingers. Mix together the wine or sherry, soy sauce,
sherry and sesame oil.
Add the meat, cover and
refrigerate for 2 hours, stirring occasionally. Cut
the spinach leaves into large pieces and the stems
into thick slices.
Heat 30 ml/2 tbsp of oil and
stir-fry the spinach stems and ginger for 2 minutes.
Remove from the pan. Heat the remaining oil. Drain
the meat, reserving the marinade.
Add half the meat
to the pan, spreading out the slices so they do not
overlap. Cook for about 3 minutes until lightly
browned on both sides.
Remove from the pan and fry
the remaining meat, then remove it from the pan.
Blend the stock and corn-flour into the marinade.
Add
the mixture to the pan and bring to the boil. Add
the spinach leaves, stems and ginger. Simmer for
about 3 minutes until the spinach wilts then mix in
the meat. Cook for a further 1 minute then serve at
once.
