Chinese Beef Recipes - Marinated Braised Beef Recipe

Ingredients

  • 450 g/1lb chuck steak

  • 75ml/5 tbsp soy sauce

  • 60 ml/4 tbsp rice wine or dry sherry

  • 5 ml/1 tsp salt

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 15ml/1 tbsp brown sugar

  • 15 ml/1 tbsp wine vinegar


Method:

  1. Pierce the steak in several places and place in a bowl. Mix the soy sauce, wine or sherry and salt, pour over the meat and leave to stand for 3 hours, turning occasionally.

  2. Drain the beef and discard the marinade. Pat the beef dry and dust with corn-flour. Heat the oil and fry the beef until browned on all sides.

  3. Add the sugar and wine vinegar and enough water just to cover the beef. Bring to the boil, cover and simmer for about 1 hour until the meat is tender.
