Chinese Beef Recipes - Marinated Braised Beef Recipe
Ingredients
450 g/1lb chuck steak
75ml/5 tbsp soy sauce
60 ml/4 tbsp rice wine or
dry sherry
5 ml/1 tsp salt
15 ml/1 tbsp corn-flour
(cornstarch)
45 ml/3 tbsp groundnut (peanut) oil
15ml/1 tbsp brown sugar
15 ml/1 tbsp wine vinegar
Method:
Pierce the steak in several places and place in a
bowl. Mix the soy sauce, wine or sherry and salt,
pour over the meat and leave to stand for 3 hours,
turning occasionally.
Drain the beef and discard the
marinade. Pat the beef dry and dust with corn-flour.
Heat the oil and fry the beef until browned on all
sides.
Add the sugar and wine vinegar and enough
water just to cover the beef. Bring to the boil,
cover and simmer for about 1 hour until the meat is
tender.
