Chinese Beef Recipes - Minced Beef with Cashew Nuts Recipe
Ingredients
450 g/1lb minced (ground)
beef
1/2 egg white
5 ml/1 tsp oyster sauce
5 ml/1 tsp light soy sauce
few drops of sesame oil
25 g/1 oz fresh parsley,
chopped
45 ml/3 tbsp groundnut
(peanut) oil
25 g/1 oz/1/4 cup cashew
nuts, chopped
15 ml/1 tbsp beef stock
4 large lettuce leaves
Method:
Mix the beef with the egg white, oyster sauce, soy
sauce, sesame oil and parsley and leave to stand.
Heat half the oil and fry the cashew nuts until
lightly browned then remove them from the pan. Heat
the remaining oil and stir-fry the meat mixture
until browned.
Add the stock and continue to fry
until almost all the liquid has evaporated.
Arrange
the lettuce leaves on a warmed serving plate and
spoon in the meat. Serve sprinkled with the fried
cashew nuts.
