Chinese Beef Recipes - Red-Cooked Beef Recipe

Ingredients

  • 450 g/1lb lean beef

  • 120 ml/4 fl oz/1/2 cup soy sauce

  • 60 ml/4 tbsp rice wine or dry sherry

  • 15 ml/1 tbsp brown sugar

  • 375 ml/13 fl oz/1 1/2 water


Method:

  1. Place the beef, soy sauce, wine or sherry and sugar in a heavy-based pan and bring to a simmer.

  2. Cover and simmer for 10 minutes, turning once or twice. Stir in the water and bring to the boil.

  3. Cover and simmer for about 1 hour until the meat is tender, adding a little boiling water if necessary during cooking if the meat becomes too dry. Serve hot or cold.
