Chinese Beef Recipes - Stir-Fried Curried Beef Recipe

Ingredients

  • 225 gl8 oz lean beef

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 1 large onion, sliced

  • 30 ml/2 tbsp curry powder

  • 1 slice ginger root, minced

  • 15 ml/1 tbsp rice wine or dry sherry

  • 120 ml/4 fl oz/1/2 cup beef stock

  • 5 ml/1 tsp sugar

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 45 ml/3 tbsp water


Method:

  1. Slice the beef thinly against the grain. Heat the oil and fry the onion until translucent. Add the curry and ginger and stir-fry for a few seconds.

  2. Add the beef and stir-fry until just browned. Add the wine or sherry and stock, bring to the boil, cover and simmer for about 5 minutes until the beef is cooked.

  3. Mix the sugar, corn-flour and water, stir into the pan and simmer, stirring, until the sauce thickens.
