Chinese Beef Recipes - Stir-Fried Curried Beef Recipe
Ingredients

225 gl8 oz lean beef
-
30 ml/2 tbsp groundnut
(peanut) oil
-
1 large onion, sliced
-
30 ml/2 tbsp curry powder
-
1 slice ginger root, minced
-
15 ml/1 tbsp rice wine or
dry sherry
-
120 ml/4 fl oz/1/2 cup beef
stock
-
5 ml/1 tsp sugar
-
15 ml/1 tbsp corn-flour
(cornstarch)

45 ml/3 tbsp water
Method:

Slice the beef thinly against the grain. Heat the
oil and fry the onion until translucent. Add the
curry and ginger and stir-fry for a few seconds.

Add
the beef and stir-fry until just browned. Add the
wine or sherry and stock, bring to the boil, cover
and simmer for about 5 minutes until the beef is
cooked.

Mix the sugar, corn-flour and water, stir
into the pan and simmer, stirring, until the sauce
thickens.
