Place the beef in a bowl. Mix together the corn-flour,
ginger, soy sauce, wine or sherry, salt and sugar
then stir into the beef. Leave to stand for 30
minutes, stirring occasionally.
Arrange the beef
slices in a shallow heatproof dish and sprinkle with
the oil and spring onions.
Steam on a rack over
boiling water for about 40 minutes until the beef is
cooked. Serve sprinkled with parsley.
