Chinese Beef Recipes - Stir-Fried Beef with Mushrooms Recipe

Ingredients

  • 225 g/8 oz lean beef

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 15 ml/1 tbsp rice wine or dry sherry

  • 15 ml/1 tbsp soy sauce

  • 2.5 ml/1/2 tsp sugar

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 1 slice ginger root, minced

  • 2.5 ml/1/2 tsp salt

  • 225 g/8 oz mushrooms, sliced

  • 120 ml/4 fl oz/1/2 cup beef stock


Method:

  1. Slice the beef thinly against the grain. Mix the corn-flour, wine or sherry, soy sauce and sugar, stir into the beef and toss well to coat.

  2. Heat the oil and stir-fry the ginger for 1 minute. Add the beef and stir-fry until just browned.

  3. Add the salt and mushrooms and stir well. Add the stock, bring to the boil and simmer, stirring, until the sauce thickens.
