Chinese Beef Recipes - Stir-Fried Beef with Noodles Recipe

Ingredients

  • 100 g/4 oz thin egg noodles

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 225 g/8 oz lean beef, shredded

  • 30 ml/2 tbsp soy sauce

  • 15 ml/1 tbsp rice wine or dry sherry

  • 2.5 ml/1/2 tsp salt

  • 2.5 ml/1/2 tsp sugar

  • 120 ml/4 fl oz/1/2 cup water


Method:

  1. Soak the noodles until slightly softened then drain and cut them into 7.5 cml3 in lengths.

  2. Heat half the oil and stir-fry the beef until just browned. Add the soy sauce, wine or sherry, salt and sugar and stir-fry for 2 minutes then remove from the pan.

  3. Heat the remaining oil and stir-fry the noodles until coated with oil.

  4. Return the beef mixture to the pan, add the water and bring to the boil. Cook and simmer for about 5 minutes until the liquid is absorbed.
