Chinese Beef Recipes - Stir-Fried Beef with Noodles Recipe
Ingredients

100 g/4 oz thin egg noodles
-
30 ml/2 tbsp groundnut
(peanut) oil
-
225 g/8 oz lean beef,
shredded
-
30 ml/2 tbsp soy sauce
-
15 ml/1 tbsp rice wine or
dry sherry
-
2.5 ml/1/2 tsp salt
-
2.5 ml/1/2 tsp sugar
-
120 ml/4 fl oz/1/2 cup water
Method:

Soak the noodles until slightly softened then drain
and cut them into 7.5 cml3 in lengths.

Heat half the oil and stir-fry the beef until just
browned. Add the soy sauce, wine or sherry, salt and
sugar and stir-fry for 2 minutes then remove from
the pan.

Heat the remaining oil and stir-fry the noodles
until coated with oil.

Return the beef mixture to the pan, add the water
and bring to the boil. Cook and simmer for about 5
minutes until the liquid is absorbed.
