Chinese Beef Recipes - Stir-Fried Beef Shreds with Green Peppers Recipe

Ingredients

  • 225 g/8 oz lean beef, shredded

  • 1 egg white

  • 15ml/1 tbsp corn-flour (cornstarch)

  • 2.5 ml/1/2 tsp salt

  • 5 ml/1 tsp rice wine or dry sherry

  • 2.5 ml1/2 tsp sugar

  • oil for deep-frying

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 2 red chili peppers, diced

  • 2 slices ginger root, shredded

  • 15 ml/1 tbsp soy sauce

  • 2 large green peppers, diced


Method:

  1. Place the beef in a bowl with the egg white, corn-flour, salt, wine or sherry and sugar and leave to marinate for 30 minutes.

  2. Heat the oil and deep-fry the beef until lightly browned. Remove from the pan and drain well.

  3. Heat the oil and stir-fry the chili peppers and ginger for a few seconds. Add the beef and soy sauce and stir-fry until just tender.

  4. Add the green peppers, mix well and stir-fry for 2 minutes. Serve at once.
