Chinese Beef Recipes - Stir-Fried Beef Shreds with Green
Peppers Recipe
Ingredients
-
225 g/8 oz lean beef,
shredded
-
1 egg white
-
15ml/1 tbsp corn-flour
(cornstarch)
-
2.5 ml/1/2 tsp salt
-
5 ml/1 tsp rice wine or dry
sherry
-
2.5 ml1/2 tsp sugar
-
oil for deep-frying
-
30 ml/2 tbsp groundnut
(peanut) oil
-
2 red chili peppers, diced
-
2 slices ginger root,
shredded
-
15 ml/1 tbsp soy sauce
-
2 large green peppers,
diced
Method:
-
Place the beef in a bowl with the egg white,
corn-flour, salt, wine or sherry and sugar and leave
to marinate for 30 minutes.

Heat the oil and
deep-fry the beef until lightly browned. Remove from
the pan and drain well.

Heat the oil and stir-fry
the chili peppers and ginger for a few seconds.
Add the beef and soy sauce and stir-fry until just
tender.

Add the green peppers, mix well and stir-fry
for 2 minutes. Serve at once.
