Chinese Beef Recipes - Stir-Fried Beef with Tofu Recipe

Ingredients

  • 20 ml/4 tsp corn-flour (cornstarch)

  • 10 ml/2 tsp soy sauce

  • 10 ml/2 tsp rice wine or dry sherry

  • 225 g/8 oz minced (ground) beef

  • 2.5 ml/1/2 tsp sugar

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 2.5 ml/1/2 tsp salt

  • 1 clove garlic, crushed

  • 120 ml/4 fl oz/1/2 cup beef stock

  • 225 g/8 oz tofu, cubed

  • 2 spring onions, chopped

  • pinch of freshly ground pepper


Method:

  1. Mix half the corn-flour, half the soy sauce and half the wine or sherry. Add to the beef and mix well.

  2. Heat the oil and stir-fry the salt and garlic for a few seconds. Add the beef and stir-fry until just browned. Stir in the stock and bring to the boil.

  3. Add the tofu, cover and simmer for 2 minutes. Mix the remaining corn-flour, soy sauce and wine or sherry, add the to the pan and simmer, stirring, until the sauce thickens.
