Chinese Beef Recipes - Stir-Fried Beef with Tofu Recipe
Ingredients
20 ml/4 tsp corn-flour
(cornstarch)
10 ml/2 tsp soy sauce
10 ml/2 tsp rice wine or
dry sherry
225 g/8 oz minced (ground)
beef
2.5 ml/1/2 tsp sugar
30 ml/2 tbsp groundnut
(peanut) oil
2.5 ml/1/2 tsp salt
1 clove garlic, crushed
120 ml/4 fl oz/1/2 cup beef
stock
225 g/8 oz tofu, cubed
2 spring onions,
chopped
pinch of freshly ground pepper
Method:
Mix half the corn-flour, half the soy sauce and half
the wine or sherry. Add to the beef and mix well.
Heat the oil and
stir-fry the salt and garlic for a few seconds. Add
the beef and stir-fry until just browned. Stir in
the stock and bring to the boil.
Add the tofu,
cover and simmer for 2 minutes. Mix the remaining
corn-flour, soy sauce and wine or sherry, add the to
the pan and simmer, stirring, until the sauce
thickens.
