Chinese Chicken Recipes - Bacon Wrapped Chicken Recipe

Ingredients

  • 225 g/8 oz chicken, cubed

  • 30 ml/2 tbsp soy sauce

  • 15 ml/1 tbsp rice wine or dry sherry

  • 5 ml/1 tsp sugar

  • 5 ml/1 tsp sesame oil

  • salt and freshly ground pepper

  • 225 g/8oz bacon rashers

  • 1 eggs, lightly beaten

  • 100 g/4 oz plain (all-purpose) flour

  • oil for deep-frying

  • 4 tomatoes, sliced


Method:

  1. Mix the chicken with the soy sauce, wine or sherry, sugar, sesame oil, salt and pepper.

  2. Cover and leave to marinate for 1 hour, stirring occasionally, then remove the chicken and discard the marinade. Cut the bacon into pieces and wrap it around the chicken cubes.

  3. Beat the eggs with the flour to make a thick batter, adding a little milk if necessary. Dip the cubes in the batter.

  4. Heat the oil and deep-fry the cubes until golden brown and cooked through. Serve garnished with tomatoes.
