Chinese Chicken
Recipes - Bacon Wrapped Chicken Recipe
Ingredients
225 g/8 oz chicken, cubed
30 ml/2 tbsp soy sauce
15 ml/1 tbsp rice wine or dry
sherry
5 ml/1 tsp sugar
5 ml/1 tsp sesame oil
salt and freshly ground pepper
225 g/8oz bacon rashers
1 eggs, lightly beaten
100 g/4 oz plain (all-purpose)
flour
oil for deep-frying
4 tomatoes,
sliced
Method:
Mix the chicken with the soy sauce, wine or sherry,
sugar, sesame oil, salt and pepper.
Cover and leave
to marinate for 1 hour, stirring occasionally, then
remove the chicken and discard the marinade. Cut the
bacon into pieces and wrap it around the chicken
cubes.
Beat the eggs with the flour to make a thick
batter, adding a little milk if necessary. Dip the
cubes in the batter.
Heat the oil and deep-fry the
cubes until golden brown and cooked through. Serve
garnished with tomatoes.
