Chinese Chicken
Recipes - Braised Chicken with Eggs Recipe
Ingredients
30ml/2 tbsp peanut oil
4 chicken breast fillets,
cut into strips
1 red pepper, cut into
strips
1 green pepper, cut into
strips
45ml/3 tbsp soy sauce
45ml/3 tbsp rice wine or
dry sherry
250ml/1 cup chicken stock
100g/4 oz iceberg lettuce,
shredded
5ml/1 tsp brown sugar
30ml/2 tbsp hoisin sauce
salt and pepper
15ml/1 tbsp corn-flour
30ml/2 tbsp water
4 eggs
30ml/2 tbsp sherry
Method:
Heat the oil and fry the chicken and peppers until
golden brown. Add the soy sauce, wine or sherry and
stock, bring to the boil, cover and simmer for 30
minutes.
Add the lettuce
sugar and hoisin sauce and season with salt and
pepper. Mix the corn-flour and water, stir it into
the sauce and bring to the boil, stirring.
Beat the eggs
with the sherry and fry as thin omelets. Sprinkle
with salt and pepper and tear into strips.
Arrange in a
warmed serving dish and spoon over the chicken.
