Chinese Chicken Recipes - Braised Chicken with Potatoes Recipe

Ingredients

  • 4 chicken pieces

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 1 onion, sliced

  • 1 clove garlic, crushed

  • 2 slices ginger root, minced

  • 450 ml/1/4 pt/2 cups water

  • 45 ml/3 tbsp soy sauce

  • 15 ml/1 tbsp brown sugar

  • 2 potatoes, cubed


Method:

  1. Chop the chicken into 5 cm/2 in pieces. Heat the oil and fry the onion, garlic and ginger until lightly browned.

  2. Add the chicken and fry until lightly browned. Add the water and soy sauce and bring to the boil.

  3. Stir in the sugar, cover and simmer for about 30 minutes.

  4. Add the potatoes to the pan, cover and simmer for a further 10 minutes until the chicken is tender and the potatoes are cooked.
