Chinese Chicken Recipes - Braised Chicken Recipe

Ingredients

  • 75 ml/5 tbsp groundnut (peanut) oil

  • 1 chicken

  • 3 spring onions (scallions), sliced

  • 3 slices ginger root

  • 120 ml/4 fl oz/1/2 cup soy sauce

  • 30 ml/2 tbsp rice wine or dry sherry

  • 5 ml/1 tsp sugar


Method:

  1. Heat the oil and fry the chicken until browned. Add the spring onions, ginger, soy sauce and wine or sherry, and bring to the boil.

  2. Cover and simmer for 30 minutes, turning occasionally. Add the sugar, cover and simmer for a further 30 minutes until the chicken is cooked.
