Chinese Chicken Recipes - Chicken with Almonds and Water Chestnuts Recipe

Ingredients

  • 6 dried Chinese mushrooms

  • 4 chicken pieces, boned

  • 100 g/4 oz ground almonds

  • salt and freshly ground pepper

  • 60 ml/4 tbsp groundnut (peanut) oil

  • 100 g/4 oz water chestnuts, sliced

  • 75 ml/5 tbsp chicken stock

  • 30 ml/2 tbsp soy sauce


Method:

  1. Soak the mushrooms in warm water for 30 minutes then drain. Discard the stalks and slice the caps. Thinly slice the chicken.

  2. Season the almonds generously with salt and pepper and coat the chicken slices in the almonds. Heat the oil and fry the chicken until lightly browned.

  3. Add the mushrooms, water chestnuts, stock and soy sauce, bring to the boil, cover and simmer for a few minutes until the chicken is cooked.
