Chinese Chicken Recipes - Chicken with Apricots Recipe

Ingredients

  • 4 chicken pieces

  • salt and freshly ground pepper

  • pinch of ground ginger

  • 60 ml/4 tbsp groundnut (peanut) oil

  • 225 g/8 oz canned apricots, halved

  • 300 ml/1 1/4 cups Sweet and Sour Sauce

  • 30 ml/2 tbsp flaked almonds, toasted


Method:

  1. Season the chicken with salt, pepper and ginger. Heat the oil and fry the chicken until lightly browned.

  2. Cover and cook for about 20 minutes until tender, turning occasionally. Drain off the oil.

  3. Add the apricots and sauce to the pan, bring to the boil, cover and simmer gently for about 5 minutes or until heated through. Garnish with flaked almonds.
